The complete shortcut

The finish should be shiny and fluid, with no visible large bubbles. Microfoam is milk and air integrated throughout—not hot milk sitting beneath a separate foam cap.

01Prepare

Start cold and leave room

Pour refrigerated milk into a clean stainless-steel pitcher. Start around the bottom of the spout or roughly one-third to one-half full, depending on the jug shape and drink size.

Look and listen for

You have enough milk to cover the steam-tip holes and enough empty space for expansion.

Avoid

An overfilled jug, warm starting milk or far more milk than the drink needs.

02Before milk

Purge condensation

Point the wand safely over the drip tray and open it briefly, following the machine manual. This clears condensed water before the tip enters the milk.

Look and listen for

The wand produces dry, steady steam rather than an initial spit of water.

Avoid

Purging towards your hand, leaving the wand unattended or touching the hot metal.

03Position

Set the tip at the surface

Place the steam tip just beneath the milk surface, with the holes covered. Tilt or offset the pitcher only as much as your wand and jug need to move the whole body of milk.

Look and listen for

The milk begins rotating and the sound is controlled—more like soft paper tearing than harsh spluttering.

Avoid

A deeply buried tip, which only heats, or a tip above the surface, which makes large bubbles and spray.

04Stretch

Add the air early

Lower the pitcher by millimetres so the tip repeatedly kisses the surface. Add small, controlled sips of air while the milk is still cool, then stop aerating once the volume has grown enough for the drink.

Look and listen for

The surface rises gradually without visible soap-like bubbles or violent gulps.

Avoid

Adding air late, bouncing the pitcher or stretching continuously until the foam becomes stiff.

05Texture

Submerge slightly and roll

Raise the pitcher a fraction so the tip sits below the surface. Hold it steady and maintain a rolling circulation that folds the introduced air through the milk.

Look and listen for

Large bubbles disappear, the surface becomes glossy and the whole pitcher rotates as one body.

Avoid

Chasing the whirlpool with big movements or letting the wand drill into one stationary spot.

06Finish

Stop, clean and pour

Stop steam before removing the tip. A thermometer target of about 60–65°C is a practical starting range for dairy milk. Wipe the wand immediately with a dedicated damp cloth, purge safely, then swirl and pour the milk without delay.

The pitcher is glossy inside and the milk moves like warm wet paint—not a liquid layer under a foam cap.

Every drink benefits from fine, integrated bubbles. Cappuccino needs more expansion than a flat white, but not a dry spoonful of foam.

Small volume, fluid texture and a low finish suit a compact cup.

02A little more

Latte

Silky microfoam with enough expansion to soften a longer milk drink.

Cappuccino

More volume and a plush texture, but still fine and glossy rather than dry foam.

Aim for an even combination of espresso, milk and microfoam—not a rigid cap.

Microfoam troubleshooting

Read the symptom before moving the wand.

Most faults come from vertical tip position, when the air was added, or whether the milk circulated after stretching.

Big visible bubbles

The tip rose too far above the surface or took in large gulps of air.

Steam burns quickly
